Amidst all this, I am happy it’s Summer time. Which means, it’s Mango time ! Now, don’t we all wait the whole year for this divine fruit. My refrigerator is at all times stocked with mangoes, mangoes and more mangoes. You open the door and there you go. That smell of mangoes linger on. And what a feeling that is. Then there is this urge to use mangoes in every possible dish that is being cooked. Anything for the love for mangoes you see.
Chilled Mango Pudding seemed the perfect dessert for today. And this is one of the easiest recipes I have come across so far. In this brutal heat when making anything is not appealing, am sure this pudding is something one can not refuse. It just takes four ingredients and you are good to go. You can make it in flat 15 minutes plus the chilling time.
I have read recipes that use whipping cream or coconut milk in Mango Puddings. Those taste superb no doubt. But this time around I was quite kicked about the idea of using yogurt. Sounds healthy as well. The mangoes I picked up from the supermarket were very sweet. I also added condensed milk. So the entire concoction was about to give me great results. That I was sure of.
I think it’s been over a year or more that I had posted a dessert recipe in my blog. So a dessert post was anyway long overdue. And so, what can be more apt that a mango dessert recipe. Come to think of it, there are so many restaurants organising mango festivals all over the city. The thought of it makes me so elated.
- Mango Puree 1 cup
- Condensed Milk 1/2 cup
- Yogurt 1 cup
- Gelatin 1 tbsp. soaked in 3 tbsp. water to 10-15 mins
- Heat soaked gelatin in Micro HI power for 10 seconds.
- Beat the yogurt lightly so that there are no lumps.
- In a bowl, put all the ingredients and mix well. Leave to set in the refrigerator for at least 3 hours before serving.
- Serve chilled
